It has ranges of native tribes, lifestyle, tribal customs, and some west papua culture and culinary signature. Some Of The Staple Foods You Find In Papua

1. Sago

The most basic staple food for almost all of the native Papuan are Sago. Sago is the starchy substance that extracted from sago palm. Most of the west papua or papua new Guinean cuisines are made of sago. It tend to be served in many form, including sago pancake, block, or porridge (papeda). It is has a plain taste, thus people eat it along with other ingredient.

People consume it just like a rice. So, the staple diet can goes along with meat, fish, or other substance. Some other traditional cuisine made of sago is Saksak. It also called as sago pearl which is cooked with banana pieces. It taste sweet and eaten along with coconut milk. Some other west papua culture and culinary is DIA. It similar to Saksak but eaten with coconut cream.

2. Taro

Another root based food is Taro. In papua, the staple food ingredient is called Taro corm. It mostly served along with its leaves as a traditional diet. While it is the staple diet for natives, but taro mostly part of the special event ingredient (along with pig). Local will pounded Taro and add coconut oil with care.

3. Kokoda Fish

The coastal or lowland tribe staple food are mainly sago, fish, and some agriculture harvest. But the most popular marine based food is Kokoda fish. It is a fish that are living in the clear stream of foothills rainforest. When it come to dish, local eat it as snacks or appetizers. The west papua culture and culinary also mix the fish with potato or taro chip to comple the dish.

4. Kaukau

Also called as called sweet potato, the traditional staple diet for native papua are very down to earth (literally). It is a root vegetable that tend to be cooked in many ways. It can be part of the daily dish, cooked for special event, or simply as snack. Along with Sago, KauKau might be one of the most common ingredients you can find in West Papuan cuisines.

For the greens or vegetable, the native has two main components. It either cassava leaf or Kumu. Kumu or kumus itself refer to most of the edible leaves in the vicinities. It can be the leave of kangkong, Rungia, Aibika, Amarant, etc. Meanwhile the cassava leaf is part of west papua culture and culinary starch ingredient. It is a major carbohydrate source and treated into tapioca powder (alternate to sago).
